Vara's Silverhead American Brut is crafted by master sparkling winemaker Laurent Gruet in the classical methode champenoise.
Beautiful summer wheat color with persistent strings of tiny bubbles. The classical methode champenoise aromas of almonds, pears, apricots, and grapefruit blend with the unique chamomile floral and wet stone minerality from the addition of Spanish grapes. The mousse is creamy on the palate, light in body and has a refreshing acidity. The complex array of fruit, citrus, floral, and toasty flavors are showcased by a balanced dosage and linger to a very long finish. 25% Xarel-lo/Macabeo from Alt Penedes DO in Spain, and 72% Chardonnay with 3% Syrah from Ancient Lakes AVA in Washington State USA. | Vara Wines

2020 Adelaida Pinot Noir HMR Estate Vineyard | Adelaida District AVA, Paso Robles California RED

The old vines of HMR form a unique vineyard mix lacking a source attribution, they are a 'massal selection' aka the 'HMR clone' having evolved from a multiplicity of original vines. The HMR designation indicates that the wine is based on our best vineyard sites and the oldest vines.
These esteemed old vines display the compelling attributes of new-world fruit entwined around old-world flavor and structure. Fruit forward aromas of black cherry, raspberry, and musky rose combine beautifully with savory allspice and rich earth. The rare soil combination, over limestone clay, creates both finesse and structure. Upon release, the wine is vibrant and juicy, this flavor profile originates from the natural bright fruit acidity of grapes grown in limestone soils. 2019 Halter Ranch Cabernet Sauvignon | Paso Robles, California RED

The 2019 Estate Cabernet Sauvignon features aromas of black cherry, red currant, cassis, and a touch of pencil lead. The palate is soft and rich, exuding flavors of raspberry, blueberry, and a hint of cocoa. Lengthy, integrated tannins lead to a seamless finish.

We enjoyed the Vara Silverhead American Brut.  It is bright and smooth on the palate with fine bubbles.  Certainly not a typical Spanish Cava, closer to a French sparkler.  When Tiffany dropped off the trio, she mentioned her surprise that the Adelaida Pinot Noir was included in the shipment and that she thought it was too fruit forward.  After tasting it, we agree with Tiffany that the wine's fruitiness got in the way of any minerality/terroir and had a shallow palate finish.  We haven't opened the 2019 Halter Ranch Cabernet Sauvignon yet but plan to soon.
